The Gospel Unveils Australia's First Bottled-in-Bond Whisky

The Gospel Bonded Rye

Australia has never had a whisky that follows the rules of America's strictest whiskey label, until now. The Gospel, the country's only dedicated rye whisky distillery, has launched The Gospel Bonded Rye Whiskey, described as the first Australian whisky to meet the standards of the US Bottled-in-Bond Act of 1897. It is also the Melbourne distillery's first new core range bottle in nearly six years, so this is a big moment for the brand.

Did You Know?

  • The Bottled-in-Bond Act of 1897 is one of the earliest consumer protection laws in US history. It was designed to guarantee what was actually in the bottle.

  • The "bottled-in-bond" label is technically only applicable to US spirits. The Gospel's rye meets the distilling, age and bottling strength rules, but it does so as an Australian whisky following the standard rather than carrying the official label.

  • The rye comes from a single farm in Murray Mallee, South Australia. According to Drinks Digest, the region's harsh climate produces small, dense grain.

The Release

Bottled-in-bond sounds like a marketing phrase, but it is a checklist. The whiskey must be made by one distiller, at one distillery, in one distilling season. It must then age for at least four years in a federally bonded warehouse (a government-supervised storage facility) and be bottled at 100 proof, which is 50% ABV.

The Gospel Bonded Rye meets those requirements for distilling, age and bottling strength. Master distiller Ian Thorn made it using 100% un-malted Australian rye, all from one farm in Murray Mallee. Un-malted means the grain has not been sprouted before mashing, which is a common route for letting rye show its own spicy, bready character. Drinks Digest describes Thorn as Australia's only accredited Master Distiller who has guided The Gospel's distilling since the early days.

Co-founder Andrew Fitzgerald calls it "the most deliberate whiskey we've ever made." He says the idea was to see what is possible when you take the strictest standard in American whiskey and apply it in a Melbourne distillery with the best Australian rye and top local distilling talent.

According to the tasting notes released with the whisky, expect toffee apple, caraway, chai spices, vanilla, rye bread and sweet pastry. Drinks Digest adds dark rye bread, fennel seed and creamy grain on the nose, with pepper on the palate.

The Story of The Gospel

The Gospel was founded in 2019 by Andrew Fitzgerald and Ben Bowles, a pair of engineers who became distillers. It is based in Melbourne, and by its own account it grew out of an obsession with great American whiskey and a wish to make a distinctly Australian version.

It is Australia's only dedicated rye whisky distillery, which gives it a clear focus in a category usually dominated by barley-based single malt. Its existing lineup includes the 45% ABV Straight Rye, which is also sold in the US. The Bonded Rye now joins the core range as a higher-proof, more tightly defined sibling.

Why It Stands Out

Australian whisky is often discussed in terms of single malt, so a rye built around an American rulebook is a different kind of statement. Earlier this year, Andy Gaunt of Tasmania's Sullivan's Cove told The Spirits Business that Australian whisky could one day be as big internationally as Australian wine. Releases like this one, with a clear provenance story and a tough standard, are the kind that could help make that case. The single-farm grain and single-season rules also give collectors a clear, traceable story.

Tonights Poison Take

Bonded whiskey is a favorite among American bourbon and rye fans because the rules take the guesswork out of it. Seeing an Australian distillery willingly adopt those rules, and put its own farm-sourced rye behind them, is a confident move. At about US$98 it is not cheap, but the proof, the age floor and the single-farm grain give it a story that is easy to follow. We would be curious to see how it sits next to American bonded ryes.

Bar Talk: The Gospel just made what is billed as Australia's first bottled-in-bond whisky, and it did it with rye from one farm.
